Artisan Blackened Chicken Taco Recipe

Blackened spicy chicken with souped up black beans, sweet corn relishand avocado cream sauce and cotija cheese topped with a touch of Sriracha sauce.

Ingredients

  • Lazy Man's Kick Ass Beans:
  • 2 cans 15.5 oz of black beans
  • 1 tbsp of coconut oil
  • 2 tsp cumin
  • 1 tsp coriander flakes
  • a pinch to 1/4 tsp of cayenne pepper
  • 1 medium yellow or sweet onion
  • 4 cloves of minced garlic
  • Cilantro or Cilantro flakes
  • Avocado Cream Sauce:
  • 1/2 of ripened Avocado
  • 1 1/2 tablespoons of fresh lemon juice
  • 1/4 cup of plain Greek Yogurt
  • 1/2 teaspoon of of garlic powder
  • Corn Relish:
  • 1 can of sweet corn
  • juice of 1/2 lemon
  • juice of 1/2 lime
  • 1 tablespoon of butter
  • Fresh cracked pepper
  • Blackened Chicken:
  • 1 pound of chicken tenderloins
  • 1 teaspoon of ground pepper
  • 1 teaspoon of onion powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of pink Himalayan salt
  • Olive Oil
  • Tacos:
  • 8 soft taco tortilla
  • Shredded Cotija Cheese
  • Sriracha sauce

Instructions

Lazy Man’s Kick Ass Beans:

  1. Grab a cast iron skillet, add the coconut oil, onions and the garlic. Cook till onions are translucent.
  2. Add the two cans of beans.
  3. Season with cumin, coriander flakes, and cayenne.
  4. Simmer till most of the liquid has evaporated away.
  5. Top with the cilantro and give it a good stir.

Avocado Cream Sauce:

  1. Grab a small food processor add the fruit of 1/2 an avocado.
  2. Next comes the lemon juice, then Greek yogurt followed by the garlic powder.
  3. Blend till smooth and creamy.

Corn Relish:

  1. Open and drain a can of sweet corn.
  2. Place in a cast iron skillet with a tablespoon of butter. Heat on medium.
  3. The goal is to fully cook and caramelize the corn slightly.
  4. Pepper and add the lemon and lime juice, mix well.

Blackened Chicken:

  1. Slice the tenderloins in to 1 inch pieces, and add to a medium bowl.
  2. Next add the ground pepper, cumin, onion powder, paprika, cayenne pepper, and salt.
  3. Mix the spices well.
  4. Add the chicken to the spices and toss well.
  5. Wet a cast iron skillet with some olive oil at higher heat.
  6. Next place the chicken in the skillet and fully cook.

Assembly:

  1. Take a cast iron griddle and heat it up. Place a soft taco tortilla on the griddle, slightly brown each side.
  2. Place the chicken, followed by the bean mix.
  3. Add the avocado cream.
  4. Next comes the corn relish.
  5. Then the shredded Cotija cheese.
  6. The final touch is Sriracha sauce to taste. Serve. Also excellent with a side of Lazy Man’s Kick Ass Beans.
