Croque Madame Sandwich

Classic French Ham and Cheese with cheese sauce sadwich

  • Sauce
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • pinch of white pepper
  • 1/4 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Sandwich
  • 4 Brioche rolls or pieces of bread
  • 2 tbsp unsalted butter
  • 8 to 16 pieces ham honey baked preffered (1 or 2 per sandwich)
  • 1 to 2 tbsp or more of Dijon mustard
  • 2 cups grated Gruyère cheese
  • Sunny Side Up Egg
  • 2 tsp unsalted butter
  • 4 large eggs
  • kosher salt to taste
  • freshly ground black pepper to taste


  1. Start by preheating the oven to 400 degrees Fahrenheit. Take a small sauce pot and start preparing the Mornay sauce. Begin by melting the unsalted butter on medium low heat. Begin making the rouxe, add the flour and whisk continuously. Let it cook for a minute or two. Next add the milk and continue whisking till it starts to thicken lightly. Add the fresh nutmeg, salt and pepper. Remove from the heat, whisk and incorporate the freshly grated Parmesan and Gruyère cheeses. Place to the side and prepare the bread.
  2. I used Brioche rolls, I barely cut off the very end of both sides of the roll. Then I divided it in to two. Butter both sides and place on a baking sheet with parchment paper. Bake till the bread is lightly toasted. Flip the toast and repeat the other side.
  3. Spread Dijon mustard on to the bottom slice of toast. Next comes the ham slice or slices. Followed by a touch of Gruyere cheese, (about two tablespoons). Spoon a tablespoon or so of the cheese sauce, cap with the top of the bun. Move the sandwiches to the parchment lined baking sheets. Top all the sandwiches equally with the remaining sauce followed by the remaining cheese. Place the sandwiches in the oven for a couple of minutes till the cheese melts. Then flip on the broiler to give the tops of sandwiches a nice golden brown.
  4. While the sandwiches are baking prepare the eggs. You can always start them a few minutes earlier if you need a little more time. Grab a nonstick skillet. Butter the skillet. Cook the eggs till the are done Sunny Side Up. I would put the finish eggs on a separate plate while waiting for the oven to finish up. When the sandwiches are golden brown remove the tray. Plate the sandwiches and top with the finished egg. Salt and pepper to taste and Serve.
