Taco Pasta
Here is a great little recipe I make at the firehouse. It doesn’t cost much, it’s easy to make and cleanup is one big ol’ skillet.
Ingredients:
1 to 1.5 pounds of ground beef
1 Heaping cup Farfale or Bow tie Pasta
1 pack of taco mix
1 onion copped
1 red pepper minced
1 green pepper minced
1 can of black beans drained
lettuce chopped
sour cream
salsa
Whiz Cheez or 1/2 cup of shredded Mexican 4 cheese blend around 4 oz
Olive oil
2 Cups of Water
optional: Guacamole
Method:
Begin making the Taco Pasta by heating a large skillet. Place a teaspoon or 2 of olive oil in to the skillet followed by the ground beef. Cook the ground beef on med-high till the meat is browned. Toss in the chopped onion and cook a few minutes in with the beef. Once the onion is softened, place a cover over the beef and onion and drain any residual grease. Place the skillet back on the stove and add the heaping cup of Bow Tie Pasta, (essentially a 1 cup measuring cup filled to the top). Add the two cups of water, and the taco seasoning. Stir gently. Bring the mixture to boil. Then lower the heat to simmer and place a lid on the skillet. Give a stir every couple of minutes, and it let cook for around ten minutes. Toss in the red pepper, green pepper, and the drained can of black beans. Let the mix cook for 5 minutes more. Remove the lid and gently stir while uncovered and evaporate any large amounts of liquid remaining.
Add the salsa and the cheese stir till well blended. Note if adding shredded cheese give it a couple of minutes for the cheese to melt. Serve with chopped lettuce, sour cream, and Guacamole if available. Enjoy!
