Dumpster Fries – Homemade Fries –
What is better then homemade fries, well I’ll tell you, it’s a little creation called dumpster fries. It may look like a mess but there is a method to this madness. This recipe is part two of the CookingYo.com’s Homemade Fries, Basic Twice Baked French Fries recipe.
Dumpster Fries start with a base of chili, followed by the homemade fries. Next comes the Cheez Whiz, the bacon bits, two different kinds of peppers, cilantro, and sour cream to top it off.
Servings – 4
Prep Time – 15 minutes
Inactive Time – 30 minutes
Baking time – 45 minutes
Ingredients:
French Fries – About 2 pounds worth of Frozen store brand or follow the Cookingyo.com Twice Baked Recipe
Bacon – 4 slices
1 can of chili – No Beans
1 large Jalapeno pepper
3 red cherry peppers
1 bunch of scallions
1-2 dollops of Sour cream
small bunch of cilantro
1 15 Oz Jar of Cheez Whiz
Preparation:
You can either use the cookingyo.com “Homemade Fries – Double Baked French Fries” recipe
or follow the instructions on a 2lb-ish package of store bought frozen French Fries.
Cook 4 slices of bacon, you want them to be meaty and once they are done place them in some paper towels. Once cool slice them in to 1/8 inch x 1/2 inch bacon bits. Put aside.
Next chop the scallion to your desired thickness at a 45 degree angle. I make mine around 1/8-1/4 thick. Put aside.
Mince both the red and green peppers and put aside.
Finely chop a handful of Cilantro and put aside
Place the can of Chili in a small sauce pan and slowly heat it on low till it goes from formed to fluid chili, stir occasionally and keep at low heat till the Assembly phase.
Grab a saucepan and fill it 1/2 way. Create a water bath for the Cheez Whiz jar. Bring the water to boil and place the jar of Cheez Whiz in it. You can lower the heat a hair and give the heat a few minutes to start melting the Whiz. Stick a knife in the jar and slowly start to mix the Cheez as it melts. Don’t worry if the labels come off it’s normal. Once all the Whiz is melted you are good to go. Be careful removing the glass jar from the pot and take proper precautions to keep yourself from getting burnt or dropping the jar.
Assembly:
Grab a large dish or small serving platter.
Place the Chili on the dish spread evenly.
Place the Fries on top.
Pour at least half a half a jar (7.5 oz) to as much as you like of Cheez Whiz over top the fries.
Sprinkle the bacon bits evenly over the fries.
Next Sprinkle the red and green peppers over top. Then the chopped scallions.
Place a dollop or two of sour cream on top and evenly liberally garnish with fresh cilantro.
Serve.
