This Chicken Parm Burger recipe was developed from a great sale at the local market. It must have been a last chance sale but the price was too good for 1 pound packages of ground chicken. Needless to say I picked up a few. Now, what to do with all this chicken? Well looking in the fridge I had some good Parmesan cheese, marinara sauce, mozzarella also I had Italian bread crumbs. Heck I even had some decent rolls laying around. Well voilà! The Cookingyo Chicken Parm Burger was born.
Chicken Parm Burger
Time:25 minutes
Yield: 4 burgers
Ingredients:
1 lb ground chicken
4 ciabatta or other quality rolls
1 cup of shredded Parmesan cheese
1 cup of shredded Mozzarella Cheese
2 cups of Marinara sauce
Grape seed oil or other suitable frying oil
1 1 ½ tablespoon of Italian seasoning
2 cloves of garlic minced
1 Tablespoon of chopped Rosemary
1 small onion, small diced
Salt
Pepper
Italian breadcrumbs
2 tablespoons of Parsley
Method:
Grab a medium bowl, place the ground chicken, the Parmesan cheese, Italian seasoning, diced onion, Rosemary, garlic, salt, pepper and chopped parsley. Mix with clean hands or a wooden spoon. Form a patty.
Use a medium dish add Italian Bread Crumbs, place each patty and thoroughly cover both ends and the sides and place on a cookie sheet with waxed paper, cover with cling wrap. Put in freezer for 20 minutes to firm the patties up, or you can make these the night before and leave them in the refrigerator for the next day.
Fire up the oven and get the broiler going
Add oil and heat a large skillet to proper temperature. Remove the patties from the freezer and cook on medium-high heat for around 5 minutes, flip and cook the other side till the patty is fully cooked through.
Note: If you want a toasted Ciabatta, or Roll, go ahead and do it now.
If your skillet or pan is broiler safe the go ahead and place a liberal amount of marinara sauce followed by a 1/4 cup of Mozzarella on each patty. Put in the oven under the broiler till the cheese has melted. Otherwise place some foil on a cookie sheet. Remove each patty and place it on the sheet, place a liberal amount of marinara sauce followed by a 1/4 cup of Mozzarella on each patty. Place in the oven under the broiler till the cheese has melted.
Remove from the oven the melted cheese patties, spread Marinara sauce on both sides of the ciabatta or roll, place the patty in the middle and serve. These burgers go great with chickpea fries. Or you can even throw them on top of some pasta. Enjoy!
