Baked Taquitos Supreme
Baked Taquitos Supreme is a relatively quick meal to make. When you break it down it is a taco just in a different form factor and some of the ingredients are placed on top as opposed to inside the Baked Taquitos Supreme. Try this recipe to spice up your Taco Tuesday or just because they taste great.The biggest variable in time is where you source the chicken from. The optimal approach is to use fresh chicken breast. Sometimes when I’m cooking up a whole chicken I’ll put aside the breast just for this purpose. Or you can purchase just chicken breast and cook them through with your preferred method. The least optimal way is to use canned chicken. I will just throw this out there that it is an option but I highly recommend not using canned chicken. OK let’s get our ingredients together and make some Baked Taquitos Supreme.

Serves: 4
Baked Taquitos Supreme Ingredients:
1 1/4 – 1 1/2 pounds of chicken breast (roughly 2 large breast or 3 normal sized)
1 1/2 cups of 4 Cheese Mexican Blend Cheese
1/2 bar or 4 oz of cream cheese, softened
3 Tablespoons of TACO Seasoning (You can normally find it in bulk jars as opposed to packets but if you use packets start with two and if needs a little more open the third. Or you can make your own)
1 Tablespoon of a cooking oil. I used grapeseed this time but olive oil is good too.
12 flour tortilla
1 cup of water
Cooking Spray, Original
1 medium sweet onion
1 bunch of green onion or scallions
1 head of lettuce
1 large tomato
Sour Cream
Guacamole (we used the prepackaged 2 oz cups that come in 4 or 5 packs) but fresh Guac is always preferred.
Salt
Pepper
Baked Taquitos Supreme Method
I understand that you may not have time to cook a chicken breast up right now to make this recipe. It is optimal when the chicken is cooked and used right away. It’s ok. You can precook the chicken breast, actually you can make the mix the day before or so and put it together and bake the night you want serve.
Cook the Chicken breast through with what ever method you choose.
Take two forks and shred the breasts.
Preheat the oven to 375 degrees Fahrenheit (if baking the taquitos right after making the mix)
Grab a skillet, place on medium heat. When the pan reaches temperature place the chicken in the pan, add the taco seasoning, and the water.
Mix well till the water has all been evaporated. Continue to mix a minute or two more. Remove the pan from the heat. (we heated the chicken so the taco flavoring would absorb in to the chicken and so the heat from the chicken will help melt the ingredients in the next step)
Add the hot chicken to a large mixing bowl, add cream cheese, 4 cheese Mexican blend cheese, and the scallions. Mix till all ingredients are thoroughly blended. Taste. Add salt and pepper if needed.
***If making the mix prior to baking then stop here and place the contents of the mix in a air tight container, or place clear wrap over the bowl and refrigerate the mixture.***
Grab a baking sheet, place foil on it and spray with the cooking spray.
Take the tortillas. Wet 2 paper towels and wring them out. Place one below the stack and one on top of and Microwave for 30-45 seconds to soften them up.
Take a tortilla in your hand and place 3 or so tablespoons of mix and place it in the tortilla making sure it goes end to end. Now tightly roll, and place seam side down on the baking sheet. Repeat till all 12 are done.
Give a quick spray over top the whole tray of taquitos ensuring there is equal coverage throughout.
Place the baking sheet in the preheated 375 degree oven and bake for 15 minutes.
While they are baking, slice the head of lettuce up making shredded lettuce. I usually only use around half a head. (Wrap the leftover lettuce head up and cover with clear wrap and use it later for a salad)
Dice the Onion up and place in a separate prep bowl.
Dice the Tomato up and place in a separate prep bowl.
Get the sour cream ready and the guacamole too.
Check the Baked Taquitos at around 15 minutes. Ideally they will get golden brown on top. Just don’t let the ends burn. If they need another minute or two no big deal. Once they are golden brown on top, carefully remove.
Take 3 taquitos per person. Add sour cream and guacamole, followed by lettuce, onion, and tomato. I place another helping of sour cream and guacamole… Just because I can! Actually you can top it however you wish. It isn’t a bad idea to have a side of salsa or taco sauce but it isn’t necessary.

- 1 bunch scallions
- 1 head iceberg lettuce
- 1 Large Tomato
- Sour Cream
- Guacamole
- Salt
- Pepper
